Turkey Casserole
Ingredients
-100g cubed, smoked turkey breast (or something similar)
-1/2 onion
-1 clove garlic
-1/2 zucchini
-50 gr mushrooms
-100g non-fat cottage cheese
-1 egg
-50 gr non-fat mozzarella cheese
Saute the cubed turkey breast for about 3-4 minutes and spread it on the bottom of a rectangular baking mould (silicon is best).
Chop the onion, garlic, zucchini and the mushrooms and saute them for about 3-4 mins. Spread half of this mixture on top of the cubed turkey breast.
Combine the cottage cheese and the egg in a blender and mix until it has become a smooth consistency. Now pour this mixture over the cubed turkey breast and the first half of the veggie mixture, which is in the baking mould.
Now the second half of the veggie mixture can be spread on top of the cottage cheese mixture. Put this into a 175 C (350 F) pre-heated oven and let bake for about 40 minutes.
Now shred the mozzarella cheese and sprinkle on top of the casserole and let it bake for 5 more minutes.
